
John Ross Jr is an award-winning family-run smokehouse in Aberdeen, Scotland, producing Scottish smoked salmon in historic 160-year-old red-brick kilns dating back to 1857. Their time-honoured approach to producing delicious smoked salmon remains at the heart of their operation by focusing on traditional methods and utilising the aroma of the kilns, which have been listed by Historic Scotland for their cultural significance and produce a smoke that can’t be matched by more modern techniques. The Master Smoker and his team hang North Atlantic salmon sides over smouldering oak and beech wood chippings allowing the fish to slowly smoke, producing a tender smoked salmon and balanced, almost creamy, flavour.
We work with real farmers and a network of independent suppliers who provide fresh groceries. This allows us to keep supply chains short, treat everyone fairly and reduce unnecessary waste.
